The Science of Weight Loss
The body obtains energy in the form of calories from three basic food sources: proteins, carbohydrates and fats. When you decrease calorie consumption during dieting, your body seeks energy from stored reserves.
Carbohydrate (glycogen) reserves, which are composed of easily broken down simple and complex sugars, are converted to energy first. Next, the body turns simultaneously to the protein contained in lean muscle mass and fat reserves for additional energy.
